* 1/4 to 1/2 lb ground pork or beef (optional)

Simmer:
* 2 tb oil
+
* 16 oz firm tofu, cubed
* 3 tb (or cloves) garlic
+
* 1/2 tsp salt
* 3 tb garlic black bean sauce
+
for 3 minutes.  Set aside.
* 10-16 oz firm tofu, cubed

Sauce mix:
+
Toast (1-2 minutes) and grind:
* 1 cup chicken (or vegetable) stock
+
* 1 tbs Szechuan peppercorns
* 1 tb soy sauce
+
Set aside.
* 1 tsp sugar
+
  
* 1 tb corn starch mixed in 2 tb cold water

Fry:
 +
* 5 tbs peanut oil
 +
* 1/4 lb ground beef
 +
until well done, about 4 minutes, when the oil is clear again.
  
Garnishes:

Add:
* 1 tb sesame oil
+
* 3 tbs chili bean paste
* bunch of scallions
+
Fry at medium heat for about 2 minutes until the oil is red.
* white Szechuan pepper
+
* hot oil
+
  
Preparation:

Add:
# Fry the meat, drain and reserve.

* 2 tbs black bean sauce
# Fry the garlic in the oil until beginning to brown
+
* 2 tbs garlic paste
# Add the black bean sauce and fry for a minute or so, mashing the beans.

* 2 inches of ginger minced finely
# Return the meat and add the sauce mix.

* 1 tsp chili flakes (I omit this so that it will not be too spicy)
# Add the tofu and bring to a boil.

and fry about 1 minute, mixing well until a paste.
# Add the corn starch, boil 3 minutes.

# Mix in the sesame oil and scallions.

Add:
# Season with white pepper and hot oil to taste.

* 1 cup stock (or a bit more) or water

and the '''drained tofu''' from above, then simmer for about 7 minutes. Do not reduce too much.  Move the tofu around to prevent sticking.

* 1 tbs cooking sherry or chinese wine

* 1/4 tsp white pepper powder

* 1/2 tbs sesame oil

* 1 tbs cornstarch mixed in 2 tbs water

and the '''Szechuan peppercorns''' from above.  Allow to thicken.

Mix in:

* 2 chopped scallions

and heat for 30 seconds more. Then serve!
