A recipe from one of my female friends at Cornell.
Needs two muffin pans with paper or foil muffin cups, or 2 greased loaf pans.
- 1+1/2 cups sugar
- 1/2 cup butter
Cream the butter and sugar together. Add:
- 3 egg yolks (I often use the whole eggs, including whites)
- 3 mashed bananas (can use more if you have them)
- 1 cup yogurt (sour cream could also be used.)
- 1 tsp vanilla
Mix in those wet ingredients, then add the dry:
- 2+1/2 cups flour
- 2 tsp baking powder
- 1 tsp baking soda
Mix those in. Makes 2 dozen muffins or two loaves. Bake muffins at 350 degrees for 20 to 25 minutes. Loaves take longer.
Optional: mix in chocolate chips or dried fruit of some sort. Lumps of fresh mango might also be good.
