Black Bean Succotash

This is very fast to make, about 15 minutes, and requires nothing more than a knife, peeler, chopping board, and pan.Anything in this recipe can be varied in quantity or omitted. The flavor is unbelievable.

Fry:

  • 2 tb olive oil
  • 1 onion, chopped

Add and fry until carrot is soft:

  • 3 carrots, chopped
  • 2 tb garlic paste (or 8 cloves)

Add and fry until beginning to get soft:

  • 1 large red sweet (bell) pepper, chopped

Add and bring to a boil:

  • 2 cans black beans
  • 1 can sweet corn
  • 1 tsp ground cumin
  • salt and pepper

Optional!

Stir in until warm:

  • 3 tree tomatoes (tamarillo), chopped, or a mango (green or ripe, your choice) or some other tangy fruit. Can be omitted, but really adds to the flavor!

Garnish:

  • chopped cilantro
  • sri racha sauce

The idea is to have sufficiently varied lumps of sweet, tangy, earthy, and other flavors so that every fork full is different. So don't dice the vegetables smaller than the beans.

Serve over rice, or perhaps with sour cream.
