Blueberry Muffins

This recipe comes from Quick and Easy Blueberry Muffin Recipe.

Preheat oven to 400, and prepare a dozen muffin cups.

  • 1 1/2 cups flour
  • 3/4 cup sugar, plus 1 tablespoon for muffin tops
  • 1/2 tsp salt
  • 2 tsp baking powder

Whisk these together in a bowl.

In a measuring cup, combine:

  • 1/3 cup oil
  • 1 egg
  • milk (fill to the 1 cup level, about 1/2 cup)
  • 2 tsp vanilla

Whisk these.

Add the liquids to the bowl of dry ingredients. Stir them in with a fork, until just moist. fold in:

  • about a cup of fresh or frozen berries

Divide the stiff batter between the dozen muffin cups, top with a little sugar (optional), and bake for 15-25 minutes.
