This recipe comes from Quick and Easy Blueberry Muffin Recipe.
Preheat oven to 400, and prepare a dozen muffin cups.
- 1 1/2 cups flour
- 3/4 cup sugar, plus 1 tablespoon for muffin tops
- 1/2 tsp salt
- 2 tsp baking powder
Whisk these together in a bowl.
In a measuring cup, combine:
- 1/3 cup oil
- 1 egg
- milk (fill to the 1 cup level, about 1/2 cup)
- 2 tsp vanilla
Add the liquids to the bowl of dry ingredients. Stir them in with a fork, until just moist. fold in:
- about a cup of fresh or frozen berries
Divide the stiff batter between the dozen muffin cups, top with a little sugar (optional), and bake for 15-25 minutes.
