Gladycita's Ají

This is the recipe Alina's mother Gladys uses to make a delicious cold sauce ají that Ecuadoreans add to flavor almost any food. Soups, meat, rice, etc.

Bring to a boil:

  • 4 or 5 tree tomatoes (also known as Tamarillo or tomate de árbol)

Remove them from the boiling water immediately and peel them. Throw them into the blender.

Boil in a little water:

  • 2 chopped hot peppers (serranos or red chilies are good options)

The amount depends on how spicy you want the ají . You can remove the seeds and membranes so that the ají is not too spicy. Add gradually and blend with the tree tomatoes until the desired spicyness is attained. You may want to add more water to create the desired thickness: not as thick as ketchup, but not runny either.


  • salt
  • chopped cilantro
  • thinly sliced or chopped onions

Slather over everything you like! It might even be good with chocolate.  :-)
