Mustard Coating And Marinade For Roasting
This is taken from Julia Child's The Way To Cook page 213.
Our favorite way to roast pork and/or potatoes.
- 2 large cloves of garlic
- 1/2 tsp salt (optional)
- 2 tbs Dijon mustard
- 1 tbs Soy Sauce
- 1.5 tsp herbs: rosemary, thyme, oregano
- 2 tbs lemon juice
- 1/4 cup olive oil
Process all until creamy.
Good for about 3 pounds of potatoes or a 3 pound roast of any meat. 1 1/2 hours at 400F.
8 to 12 portions of potatoes.
