Mustard Coating And Marinade For Roasting

This is taken from Julia Child's The Way To Cook page 213.

Our favorite way to roast pork and/or potatoes.

  • 2 large cloves of garlic
  • 1/2 tsp salt (optional)
  • 2 tbs Dijon mustard
  • 1 tbs Soy Sauce
  • 1.5 tsp herbs: rosemary, thyme, oregano
  • 2 tbs lemon juice
  • 1/4 cup olive oil

Process all until creamy.

Good for about 3 pounds of potatoes or a large roast.

8 to 12 portions of potatoes.
