Pasta Sauce Raphael

Appropriate for one pound (before cooking) of ziti.

  • 1/4 cup olive oil
  • 2 cups chopped onions
  • 2 tb. chopped garlic
  • 1/2 tsp oregano
  • 1/2 tsp basil
  • 1/2 tsp salt
  • 1 tsp black pepper (originally 3 tsp!)
  • pinch of red pepper flakes (or more)
  • 6 oz canned artichoke hearts (use the marinade only here)

Fry all of the above together with the marinade of the artichoke hearts until the onions are clear. Add:

  • 28 oz can of ground tomatoes

Simmer 3 minutes. Then add the artichoke hearts and:

  • 1/4 cup grated parmesian cheese
  • 1/4 cup fresh parsely

Simmer 5 minutes. Mix with ziti.
