Pasta Sauce Raphael

Appropriate for one pound (before cooking) of ziti.
- 1/4 cup olive oil
- 2 cups chopped onions
- 2 tb. chopped garlic
- 1/2 tsp oregano
- 1/2 tsp basil
- 1/2 tsp salt
- 1 tsp black pepper (originally 3 tsp!)
- pinch of red pepper flakes (or more)
- 6 oz canned artichoke hearts (use the marinade only here)
Fry all of the above together with the marinade of the artichoke hearts until the onions are clear. Add:
- 28 oz can of ground tomatoes
Simmer 3 minutes. Then add the artichoke hearts and:
- 1/4 cup grated parmesian cheese
- 1/4 cup fresh parsely
Simmer 5 minutes. Mix with ziti.
