Pear And Pepper Salad
This is an invention of my own, perfect for hot, late summer/early autumn weather when pears and peppers are both at peak. I've never measured this recipe. The pears should be used while they're still roughly as crunchy as the peppers, not soft and ripe.
- sweet peppers, any or many colors, seeded and diced
- pears (I prefer Anjou types), cored and diced
A light vinaigrette simply of:
- vegetable oil (not much)
- cider vinegar
