From page 155 of The Vegetarian Epicure.

Heat:

  • 4 tbs olive oil

Fry for 2 minutes:

  • 3 cloves of garlic, pressed

Fry for a few minutes:

  • 1 onion, diced

Add:

  • 1 small eggplant, cubed
  • 2 small bell peppers, sliced
  • 3 medium zucchini, sliced

Stir until coated with oil, then add:

  • 1 small cucumber, diced
  • 2 cups vegetable broth
  • 3/4 cup tomato paste

Cook about 1 hour until sauce is almost gone. Add:

  • 3 tomatoes cut into eighths

Cook another minute or two.

Options:

  • salt and pepper
  • red pepper
  • thyme and basil
