Rice Pudding

I started with Creamy Rice Pudding.

Combine in a saucepan:

  • 1 1/2 cups cooked rice (may want to use broken rice)
  • 1 1/2 cups milk
  • 1/3 cup sugar (I use panela or other brown sugar)
  • 1/4 tsp salt

Cook 20 minutes until thick and creamy. Add:

  • 1/2 cup milk
  • 1 egg, beaten
  • 2/3 cup dried fruit (I use tart cherries instead of golden raisins)

Cook 2 minutes while stirring. Take off heat and stir in:

  • 1 tb butter
  • 1 tsp vanilla

You can sprinkle with nutmeg or cinnamon.
