From: Granny's German Spaetzle.
Get water boiling in a large pot.
- 6 eggs
- 1/2 cup milk
Mix together in a larger bowl:
- 2 cups flour
- 1 tb minced fresh parsley (or dried or not at all)
- 1/2 tsp nutmeg (optional)
Combine the two bowls, beating until batter is smooth. Let sit 1/2 hour or more.
Pour batter through a colander into the boiling water. You may need to add more milk if the batter doesn't flow through well.
When the spaetzle floats to the top, skip it off to drain in a colander.
- 1/4 cup butter
Fry the spaetzle in the butter a few minutes to remove external moisture.
