Vanilla Pudding

Living in Ecuador, I miss the old instant vanilla pudding mixes I used to make since I was a child. Now I see how simple the recipe really is.

From many sources, but this is the add a pinch Homemade Vanilla Pudding Recipe.

  • 1/3 cup sugare (originally 1 cup, but that was too sweet)
  • 1/3 cup corn starch (originally 1/4 cup, I but I wanted it stiffer at my high altitude oof 2800 meters)
  • 1/2 teaspoon salt

Whisk these together and set aside.

  • 4 cups whole milk

Heat until almost at a boil. Slowly add the sugar mixture into the hot milk, whisking constantly. Make sure that the mixture does not heat to the point of reaching a boil.

Cook the mixture until the pudding thickens and coats that back of metal spoon.

Whisk in:

  • 1 1/2 teaspoons vanilla extract
  • 2 tablespoons butter

Chill for an hour or more.
