Beef Stroganoff

Modified from: Beef Stroganoff.

  • 2 tbs oil
  • 1-2 lbs ground beef as s slab

Fry them together until beef browns on one side, then flip tp brown other side. The inside should be rare. Remove to a plate, where it will be broken up.

  • 3 tbs butter
  • 1 large onion, chopped

Fry together until onion softens. Add:

  • 1 lb sliced mushrooms

Fry until mushrooms are browned and liquid absorbed.

  • 2 tbs flour

Add and fry about one minute.

  • 2 cups chicken broth

Stir in until thickens from flour.

  • 1 tbs Dijon mustard
  • 1/2 cup Greek yogurt or sour cream

Add those and simmer until thickens.

  • salt
  • pepper

Adjust to taste. Add the beef back to the mix. Simmer one minute more.

Serve over anything starchy.
