Meatloaf

Modified from Brown Sugar Glazed Meatloaf. It doesn't need a glaze!

Combine:

  • 1 lb ground veal
  • 1 lb ground beef
  • 1 lb ground pork
  • 1/2 cup ketchup
  • 1/4 cup grated Parmesan cheese
  • 1 cup breadcrumbs
  • 1/4 cup chopped fresh parsley
  • 1 onion, diced fine
  • 2 raw eggs
  • 1 tbs chopped (or liquid) garlic
  • 1 tbs Dijon mustard
  • 2 tbs Worcestershire sauce
  • 1 tsp black pepper

Mash with hands until mixed, then pat into baking pan or loaf pan(s).

Bake at 350-400 degrees until done, at least an hour. Or fry at high heat to develop a nice crust.
